My Healthy Salad Recipe

Hi guys, I often get asked for specific quick and healthy salad recipes for 400 calories and less. So today I thought I'd share my not-so-closely-guarded secret salad recipe.

I have this exact salad for lunch almost every day. It's easy to make, it's healthy and there are endless variations to try.

Of course it is healthy and fits within the normal ladies' lunch calorie recommendation (if you're on a 5 a day meal strategy ;o)

INGREDIENTS

  • 1 medium red bell pepper — 78 cals
  • 1 medium tomato — 18 cals
  • 40g of broccoli — 14 cals
  • 40g avocado — 55 cals
  • Protein – either feta cheese, smoked trout/salmon. You can pretty much substitute this with a protein of your choice to the value of 160 cals.
  • Fresh herbs of your choice – basil, parsley, thyme.


FOR THE DRESSING

  • The juice of 1 medium lemon (or less – whatever you like)
  • 1 tsp extra virgin olive oil — 39 cals
  • Some salt and black pepper for seasoning. Ideally you want to use pink Himalayan salt as it is high in the sodium that's good for you.

Total Calories (for the standard recipe above) — 364 cals

PREPARATION
Just chop everything and put into a salad bowl. Season and mix well. Enjoy, and don't forget to chew thoroughly ;o)

    It looks yummy but my kids are not into veggies so I am trying to incorporate some ingredients that goes with it that my kids would definitely love. I always wanted to prepare nutritious foods because I know this is for my kids nutrition.

    I know – a lot of kids can be fussy with veggies, but through example and by letting them try as many different varieties as possible, you can find a few favorites. As you say – it's so important to create good habits for them right from the start – it will be worth the initial discomfort.
